Wormwood is a silvery shrub that seems to catch the light no matter where it’s planted. Its finely cut leaves release a sharp, resinous scent when brushed—one of those smells you don’t forget once you’ve met it. A member of the aster family, it grows easily into a soft, airy presence in the garden, about three feet tall and wide, with tiny, almost unnoticeable flowers appearing in midsummer. It does especially well on the dry, sunny edges of the garden, where other plants might struggle. Its name, absinthium, means “without sweetness,” a fitting title for an herb long revered for its bitterness and clarity. Traditionally used to make bitters (most famously absinthe), wormwood has been called upon as a digestive tonic, a plant that awakens appetite and clears stagnation. It isn’t a gentle herb, and doesn’t pretend to be. Ancient and unapologetically bitter, wormwood reminds us that healing does not always taste sweet.
